Proof DC

CIMG0307So today (August 22nd, 2009) I took my girlfriend to Proof.  It was raining when we got there but I was surprised when we walked in and Proof was packed.  The dining room was full and we would have had to wait an hour and a half for a table so we decided to eat at the bar seats.

The decor of Proof is pretty interesting it feels very manly.  They use brick, stainless steel, and wood to create a wonderful modern but classic atmosphere. CIMG0308 Proof’s dining experienced based around wine.  The bar has some pretty cool technology their is a large wine tap which houses all the bottles they serve on the bar menu. It keeps the wine at an optimal temperature and allows them to poor the perfect amount. They also have a huge wine fridge behind the bar with a ladder that slides back in forth. This brings an interesting show as the bartender is constantly going up and down the ladder to get wine or liquor.  The bar seats are comfortable but the way they are setup can make things a little tight and I am not a big guy either. The bathroom for the guys is all black with a large naked woman on the wall which is interesting.

So my girlfriend decided to try the most expensive glass on the bar menu which was Pinot Noir Blend that was about 23 dollars for an 8.5 oz glass.  The full wine list is about 60 pages which you can check out on their website here. I had a Weyerbacher pale ale which was really nice it tasted similar to my favorite beer Leffe. Proof’s menu is interesting I and I really like what they have written at the top of it it says..

Proof’s DINING PHILOSOPHY encourages you to share our CHEESE and CHARCUTERIE selections, as well as FIRST (smaller) and SECOND (larger) offerings. Of course, we welcome you to assemble your meal as you prefer.

This was a nice surprise as some restaurants frown upon this (which I think is stupid). CIMG0309 So me and my girlfriend decided to get two first courses and one main course. For the first course we got the Spicy meatballs and the Pork Confit. The Spicy Little Meatballs have goat cheese agnolotti and tomato fondue. The best thing about the meatballs was well the agnolotti it was oozing with goat cheese which gave it a great flavor.  I am not saying the meatballs aren’t good just saying that the agnolotti made me forget about it. The Crispy Pork Confit consited of a sweet soy glaze, Thai jicama salad, and lime-pepper emulsion.  This was amaxing as well the outside of the pork was so crispy and tasty and went well with the Thai jicama salad.

For the main course we decided on the Vadouvan Spiced Alaskan Halibut.
The Halibut consited of steamed jasmine rice, sautéed mustard greens,  and a fragrant coconut emulsion.  The fish was cooked perfectly it just broke apart when you touched it with your fork.  It was the perfect mixture of fish and seasoning.  I really enjoyed the fish.

For dessert we CIMG0312ended up getting the honeyed goat cheesecake with passion fruit emulsion.  It was fantastic each bite was full of goat cheese, honey, passion fruit, and cheesecake. If you can picture that in your mouth it just screams goodness.

Well I hope my review will entice you to check out Proof. It is a great place for wine and food.  I think this place will be around for a while as it blends in with the old and the new with its decor and culinary style.
